Greg's Healthy Oatmeal Chocolate Chip Cookie

2 cups old fashioned oats
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup slivered almonds (or your nut of choice)
1/2 cup walnuts (or your nut of choice)
1/2 cup soy milk (or your milk of choice)
1/2 cup coconut
1/2 cup canola oil (a little more if dough seems too dry or a little more soy milk or water)
2 chia seed egg subsitutes (1 tablespoon chia seeds 2 1/2 tablespoons water)
2 teaspoons vanilla extract
6 oz chocolate chips

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicon baking mat.

In a bowl, stir together the oats, flour, sugars, seeds, nuts, coconut, baking soda, and salt. Add oil, chia egg subsitute, milk, and vanilla extract and stir together until ingredients are combined and you have a moist dough (it will be crumbly, though moist). Stir in the chocolate chips.

Let batter sit 10 minutes before making cookies.

Bake 20 minutes and then turn off oven and let sit until oven cools.
